Features: Rock sugar is ice-shaped crystals made from white granulated sugar. It is a large-grain crystalline sugar made from sucrose and protein raw material formula, re-dissolved, cleaned and recrystallized.
Uses:
Rock sugar can increase sweetness and neutralize excess acidity. Rock sugar is mostly used to stew Chinese desserts, used as a high-grade food sweetener (bird’s nest), and can also be eaten as a candy.
Notes:
Rock candy is easier to absorb water and damp, so it is best to put it in a dry place with good ventilation. If it is found that the rock sugar is wet, it can be blown dry with an electric fan or exposed sun until it dries.
