Ingredients

Bread ingredients :
200g bread flour/high protein flour
1 ½ tablespoon cocoa powder
½ teaspoon salt
70g castor sugar
1 teaspoon instant yeast
140ml water
40g butter

Cake ingredients :
(A)
20g plain flour, sifted
20g corn flour, sifted
30g castor sugar
3 egg yolk
30ml corn oil
30ml thick pandan juice
(B)
3 egg white
½ teaspoon cream of tartar
30g castor sugar

Instructions

Method for bread:

  1. Sift bread flour/high protein flour, cocoa powder and salt into a mixing bowl, add in castor sugar, instant yeast into it and mix well.
  2. Slowly add in water and use low speed to knead the dough until smooth.
  3. Add butter to knead until the dough is fully developed and can be stretched into a very thin sheet without tearing.
  4. Remove the dough from mixing bowl, shape into a smooth ball and leave it to rise until it doubles in bulk.
  5. Punch the dough down and knead it until smooth. Then rest for 15 mins.
  6. Roll the dough into a rectangular shape then roll it up tightly. Put the dough into a rectangular shaped loaf tin and leave it to rise again until it doubles in bulk.

 

Methods for cake & whole product:

  1. Mix A in a mixing bowl until smooth.
  2. Whisk B until stiff.
  3. Mix A and B well.
  4. Pour cake mixture over the risen bread dough.
  5. Bake in pre-heated oven at 180°C for 35-40mins until golden brown and cooked.
